About converting litres and grams

Litres measure volume, while grams measure mass, so they cannot be converted with one universal factor. The missing link is density: the mass of a substance per unit of volume. This calculator uses density in grams per milliliter. Because one litre contains 1,000 milliliters, litres are converted to grams by multiplying the volume by 1,000 and then by the substance density. Grams are converted to litres by dividing the mass by 1,000 times the density. Water provides the familiar special case. At a density of approximately 1 gram per milliliter, one litre of water has a mass of about 1,000 grams. Other liquids produce different answers for the same volume. Milk is slightly denser at about 1.03 grams per milliliter, cooking oil is lighter at about 0.92, honey is much denser at about 1.42, and ethanol is lighter at about 0.789. Therefore, one litre of honey weighs substantially more than one litre of oil. The built-in density values are practical reference values rather than universal constants under every condition. Density can vary with temperature, composition, dissolved material, fat content, brand, and processing. Milk and cooking oils are mixtures, so their exact densities differ. For recipes and rough planning, the defaults are usually adequate. For laboratory, commercial, or regulated work, use a measured or authoritative density and choose Custom to enter it directly. This conversion is useful for cooking, food production, shipping estimates, liquid inventory, chemistry exercises, and container planning. It can also help when a recipe lists an ingredient by mass but the available measuring equipment is marked by volume. However, mass measurements from a scale are generally more repeatable than kitchen volume measurements, especially for viscous liquids and small quantities. Results are displayed with up to six decimal places. That display precision should not be confused with measurement accuracy. A density stated to only two or three significant digits limits the reliability of the result, even when the arithmetic shows more digits. Check that the density unit is grams per milliliter, keep the substance and temperature in mind, and label the final number as grams or litres. These steps prevent the common mistake of assuming every liquid behaves exactly like water.
